Christmas Cookies

As much as I would like to put off Christmas, it looks like it is here for us.  We started making Christmas cookies yesterday.  Kiddo picked out these cookies and helped me make them.  The other girls will get to pick out other cookies and help make them next week. 

Kiddo picked a lemon sandwich cookie.  I was worried what it would look like using whole wheat flour and unprocessed sugar.  (The sugar is brown in color, but is not the same as brown sugar.)  They did turn out a little dark in color, but we are used to that color.  I don’t know what other people will think of them.  I think that we will give some to the girl’s uncle.  He, however, won’t care what they look like, he will eat anything.

    I’m still trying to figure out how to do any christmas baking without sugar. Our kids have never had the tradition of doing any christmas baking, but I want to do it. Maybe we will make things and then give it all away.

    How about just doing breads. Pretzels, crackers, fruit breads, and so on. You won’t get to decorate them, but it would be fun to do.
