Sugar Free Christmas Treats

This one is for you.  After your comment, I got to thinking about what kinds of things could be Christmas Treats.   So far, this is what I have come up with.

1)Homemade Chex Mix

2)Cheese Pennies (these cheese crackers are really good)

1 Cup flour

1/2 teaspoon salt

1/2 teaspoon cayenne pepper (I only use a pinch)

8 ounces extra sharp Cheddar cheese

8 Tablespoons butter (at room temp.)

Mix flour, salt, and cayenne together.

Grate cheese using smaller holes.

Cream butter.  Add cheese and mix well.  Add flour mixture.  Mixture will be quite stiff.

Shape into two 9-inch long logs about 1 inch in diameter.  Wrap in waxed paper, then in foil.  Refrigerate overnite.

Preheat oven to 375 degrees Fahrenheit.

Slice thinly (1/8 to 1/4 inch) and bake on un-greased cookie sheet for 12 min. or until golden.

3)Granola (I have a good recipe for this too if you need it.  It uses honey though.)

4) Salsa, Guacamole, Spinach dip, or other things to serve with chips or bread.

Now that you have me thinking, I think that we will add some Chex mix and cheese pennies to our holiday baking.    Maybe even some pretzels or breadsticks  (in whatever shapes the girls want to make).

Thanks for the ideas. Chex mix is one that I plan on making. I’d love the granola recipe. We do honey all the time. I have some great pie recipes with honey (pumpkin and pecan). We are going to bake cookies this weekend and have a skype decorating party with some cousins. It was Grandma’s idea.

    Here is the granola recipe.

    Tam’s Granola
    5 c. oats
½ c. oil (you can use coconut oil if you want)
    ½ c. honey
    1 t. vanilla
    1 t. cinnamon
    1 c. coconut

Mix all ingredients in crockpot. Cook on low for 5 hours with the lid cracked. Stir occasionally.
(You can add dried fruit or nuts after it is cooked.)
